Healthy Chicken Stir Fry

Chicken Stir Fry is one of my all time favourite dishes. Consequently, I was determined to make a healthier alternative to this dish with ingredients I trust.  After testing a few recipes, this one is absolutely delicious. 

1. Boil water on high - when water comes to a boil, throw in egg noodles (I chose thin) for 3 minutes max - or follow instructions on package

Prepare your chicken/veg mix! You can throw all of your favs here! I started with 6 chicken thighs and let it marinate in a teriyaki sauce (I just purchased a packaged one from my all-natural health food store) with onions, garlic, salt and pepper for a few hours. I cooked the chicken and cut into small pieces. In a wok, I put a tbsp of extra virgin olive oil, my cooked/seasoned chicken, and threw in LOADS of veggies: Peas, bell peppers, broccoli, snow peas, green beans, and scallions. I then used 5 tbsps of soya sauce (naturally fermented and low in sodium), and 1 tbsp of sesame oil. I covered it on low heat and let the flavours marry for about 10 minutes.

Then, add your noodles and mix.
