Pizza Stuffed Chicken!
As I prep for my Bali getaway in 3 weeks, I’m cutting back slightly on the weekly cheat meals so I can rock my bikini with pride and confidence! Naturally, I’m missing my pizza fix so I decided to find an alternative! I made pizza stuffed chicken last night and let me tell you, it totally did the job. I was super satisfied!
- 1 tbsp of Italian Seasoning
- 1 tsp of Garlic Powder
- 2 large Chicken Breasts
- Salt and Pepper to taste
- 1 cup of low sodium, all natural Pizza Sauce
- 8 large Spicy Pepperonis
- 2 ounces of your cheese of choice (I opted for Brie)
- Parmasean Cheese
Here are the step by step directions on how I make it!
Step 1: Preheat oven to 350 degrees. Slice 2 Chicken Breasts in half to make 4. Pound Chicken Breast Flat and add Salt, Pepper, Garlic Powder, and Italian Seasoning
Step 2: Spread Pizza Sauce, 2 Pepperonis (per Breast), and 1/2 ounce of cheese to one side of each flattened Chicken Breast
Step 3: Fold over and secure with toothpicks if needed. Cover baking pan with foil and spray oil. Bake for 35-40 minutes or until cooked.
Step 4: Once cooked, top with more pizza sauce and Parmesan cheese. Broil for 5 minutes and enjoy your dish!
